Welcome to perfect Shortcrust

I’m guessing you’re here because you want to understand the rules for making pastry.  Maybe you’ve had issues in the past and aren't sure what went wrong, or perhaps you’re like me and just love to know how things work. 


There’s no real mystery to the making of good pastry dough.  The only requirement is an understanding of the equipment you will need, a few simple ingredients and the methods for handling them.
