If you're like me, knowing some of the geeky stuff helps cement what is going on, so I can make my own decisions along the way.  Although this method is so simple, you don't really have to know a lot. 

There is a lot of information on the net that isn't necessary for making great Sourdough.  

I make bread every couple of days with this method.  I find this simple routine easier than making bread with commercial yeast.
