People often ask me why I do not use my Thermomix or a stand mixer for this bread. The short answer is that I have not needed to. The method in this course uses a high-hydration dough that is brought together by hand with a few simple folds, then left to do its own work overnight.
A Thermomix or stand mixer can definitely knead dough, and they are wonderful for many things. For this particular overnight method, though, time does most of the work. The long, slow fermentation develops the gluten for you, so mechanical kneading is not really needed.
If you already love using your Thermomix or stand mixer for bread, please carry on. This is simply the way I prefer to make this loaf — fewer things to wash, and a process that fits into a busy day.
